No Crust Apple Pie

My father-in-law won first prize in an Apple Pie Baking Contest at his office with this recipe, and my kids request it all the time.  The top crust is like a giant sugar cookie that oozes down into the apples.  Some people call this a Swedish Apple Pie, but I just call it yummy!

Ingredients:
  • Peeled and chunked apples (at least 8)
  • 1 cup sugar
  • 1.5 sticks butter at room temperature (I use unsalted for baking)
  • 1 egg
  • 1 cup flour
  • 1/2 cup chopped walnuts
  • pinch of salt
  • cinnamon and sugar to sprinkle
Preheat oven to 350 degrees.  Peel and chunk the apples and place them in your pie plate.  Sprinkle with cinnamon and sugar.  Combine all of the other ingredients and spread over the apples.  The batter should be a cookie dough consistency, so you may need to use your hands.  Bake for 40 minutes or until topping is lightly browned.  It's best to let it cool for an hour before serving.  Make two at a time and share one with a friend!
